I discovered local blueberries this summer at the Summerfield Farmers Market. The Market takes place each Saturday morning from 8 AM until 11 AM in Summerfield at the corner of Lake Brandt Road and Highway 150. I’ve enjoyed them so much that I purchased 2 gallons, which is 16 pints, and froze them to use for the next few months.
My family has enjoyed many stacks of blueberry pancakes this summer! I wanted to share my healthy and delicious recipe with you. I crank this out in huge stacks and then refrigerate or freeze them to have on hand. Remember, they are not just for breakfast. They have been known to make a great dinner too!
The most important thing is to assembly your ingredients. The ingredients determine the yumminess! I use a multigrain pancake mix that comes in bulk at Earth Fare. Bob’s Red Mill also makes a great prepackaged multigrain pancake mix as well. I use Brown Cow or Stonyfield brand organic vanilla yogurt, ground flax seed meal, organic eggs, and organic milk.
Mix together:
1 1/2 c. Multigrain Pancake Mix
1/2 c. flaxseed meal
3-4 T. yogurt
2 eggs
3/4 c. milk (or enough to get batter to desired consistency)
Blueberries
For extra yummy flavor melt some coconut oil in your pan to fry them in!
